Marta Restaurant is a new Bi Ben Dum project has born through the collaboration with Spazio Rossana Orlandi.
The chef Marta Pulini has brought her cuisine all around the world- from New York to the Olympic Games of London. She is now landing with her food and wine concept in Milan, nearby the Spazio Rossana Orlandi, well-known as the heart of researching design. As Marta once said: “my cuisine is where my home is”, and that is the same for italian culture whom implant its archetype of taste. That’s Marta’s idea of cuisine in order to show always new expressions of her archetype, bringing within the charm of a food ready to become emotion, to become memory.
“I’ve always loved researching the purest and most natural ingredients even when it wasn’t a general vogue”, – Marta says.
It is no-case that Bi ben dum is landing in via Bandello, into the spaces designed by the architect Paola Navone: Rossana’s adventure is also related to the archetype of taste and experimentation, between home and research.

“The Technè, Passion, Joy.”
The simple ingredients that remain intact, specific, understandable are the signature dishes of Martha. The Technè is what allows each ingredient to express themselves, without overpowering the other, and making sure that every dish is more than the sum of the parts.
All that remains behind the scenes, but this elusive, to leave room for emotion, the passion.
Only a combination of these is possible to appreciate the dish, made of archetype and experimentation, to get excited … and here’s the Joy! Even the best design is so: you see it and excites you; then you will understand the technique of those who built it. The union between Martha and Rossana is natural, because experience leads to the other. The three primary colors refer to this: the red of the Passion, the Blue Technè, becoming finally the yellow of Joy.

She has come to professional cooking a bit late, but this has not prevent her to develop her skills in the best international schools and institutions( “le Cordon Bleu” in Paris and the “ Peter Kumpf” in New York). She worked in New York for more than 20 years, becoming a benchmark for the Italian cuisine in the U.S. and worldwide. The innovative restaurant nearby the Spazio Rossana Orlandi has the greatest aesthetic mood, with a perfect choice of food. The new restaurant, simply called “Marta”, is a fact.
